Wine Glaze


  • 1 cup sugar
  • 1/2 cup water
  • 2 tablespoonfuls sherry or Madeira wine


Boil the sugar with the water until it forms a thread between 2 fingers; remove it from fire, add the sherry or Madeira wine and stir for 1 or 2 minutes; then quickly pour it over the cake and let it stand in a dry place which is free from dust to harden.
