Rice (with Marmalade)


  • 1/2 pound rice
  • 1/4 pound butter
  • 1/2 cup sugar
  • 6 eggs
  • fruit marmalade


Boil the rice the same as in foregoing recipe for Rice (with Apples) and press it through a sieve; when cold stir the butter with the sugar to a cream and add by degrees the yolks of the eggs, the rice and lastly the whites beaten to a stiff froth; fill this mixture into a well buttered pudding dish with layers of fruit marmalade between the rice (let the last layer be rice) and bake in a medium hot oven 3/4 hour; send to table sprinkled with sugar and serve with or without sauce.
