Rice kalte Schale (with Cream)


  • 1/4 pound rice
  • 1 quart milk
  • 1/2 teaspoonful salt
  • piece of cinnamon
  • a little vanilla and lemon peel
  • yolks of 4 eggs
  • 1 quart boiling hot cream
  • sugar


Put the rice with cold water over the fire, boil 5 minutes, drain in a colander and rinse with cold water; return rice to saucepan and add the milk, salt, cinnamon, vanilla and lemon peel; when done remove peel and cinnamon and add the yolks and boiling hot cream; sweeten to taste and serve when cold.

NOTE. Milk may be substituted for cream.
