Hot Slaw


  • a small, firm head of cabbage
  • 1 cup vinegar
  • 1 tablespoonful butter
  • 1 teaspoonful sugar
  • pepper
  • salt
  • 1 egg
  • 1 cup milk


Cut the cabbage as fine as possible and put it in a large bowl; place a saucepan with the vinegar, butter and sugar over the fire and let it come to a boil; then pour it over the cabbage and season with pepper and salt; at the same time put the egg with the milk into another saucepan; beat these 2 ingredients together thoroughly and stir them over the fire till just about to boil; pour it over the cabbage and serve at once. Sweet cream may be used instead of milk.
