Boiled Paste (Paté ŕ choux)


  • 1 pint water or milk
  • 1 cup butter
  • 1 1/2 tablespoonfuls sugar
  • 1/4 teaspoonful salt
  • peel of 1 lemon
  • 1 pint sifted flour
  • 8 whole eggs


Place a saucepan with the water or milk over the fire and add the butter, sugar, salt and the peel; as soon as it boils sprinkle in slowly, stirring constantly, the sifted flour; continue stirring until it has formed into a smooth paste and loosens itself from bottom of saucepan; transfer the paste to a dish and let it cool; then mix it by degrees with the eggs and use for cream cakes, chocolate eclairs and other small cakes.
