Bismarck Sauce


  • 2 eggs
  • 1 cup of powdered sugar
  • 1/2 cup of Rhine wine
  • 1/2 cupful whipped cream


Stir the yolks with the powdered sugar to a cream, add slowly the Rhine wine, beat the white to a stiff froth, add the sauce slowly to the white while beating constantly, add last the whipped cream. In place of Rhine wine sherry wine may be taken.
