Arrack Sauce (English)


  • 1 tablespoonful flour
  • yolks of 3 eggs
  • 1 tablespoonful butter
  • piece of cinnamon
  • lemon peel
  • 2 tablespoonfuls sugar
  • 1 1/2 cups water
  • lemon juice
  • 1/2 cup arrack


Put in a small saucepan the flour mixed with a little cold water, the yolks, butter, cinnamon, a little lemon peel, the sugar and water; set saucepan over the fire, stir constantly until it commences to boil; then instantly remove from the stove, add a little lemon juice and the arrack. This sauce can be made with any kind of wine or brandy.
