Apple Custard


  • 6 medium sized apples
  • sugar
  • apple, currant or quince jelly
  • cold soft custard


Pare and core the apples, put them in a pan half filled with boiling water, cover with another pan of same size and let them boil till soft all through, but not broken; transfer them carefully to a glass dish, sprinkle over some sugar and when cold put 1 teaspoonful apple, currant or quince jelly in center of each apple; pour over a cold soft custard.


  • 1 pint milk
  • 3 well beaten eggs
  • 2 tablespoonfuls sugar
  • 1 teaspoonful cornstarch
  • essence of lemon


For custard mix the milk with the eggs and add the sugar and cornstarch; stir over the fire till nearly boiling, flavor with essence of lemon and set aside to cool.
