Zuppa Regina di Riso (Queen's Soup)

Ingredients

  • 1 tablespoonful of ground rice
  • 1/2 pint of milk
  • 1 ounce of butter
  • good fowl stock

Instructions

Put ground rice into a saucepan and gradually add milk, boil it gently for twelve minutes in a bainmarie, but stir the whole time, so as to get it very smooth. Just before serving add butter, pass it through a sieve, and mix it with good fowl stock.
