Soup all'Imperatrice

Ingredients

  • breast of a fowl
  • 1 teaspoonful of ground rice
  • yolk of 1 egg
  • salt
  • pepper
  • pinch of nutmeg
  • clear soup

Instructions

Pound the breast of a fowl in a mortar, and add to it ground rice, egg yolk, salt, pepper, and nutmeg. Pass this through a sieve, form quenelles with it, and pour a good clear soup over them.
