Risotto all'Italiana

Ingredients

  • 1 small onion
  • butter
  • 1/2 pint of very good stock
  • 4 ounces of rice
  • 3 medium-sized tomatoes
  • 2 tablespoonsful of grated Parmesan and Cheddar mixed

Instructions

Fry onion slightly in butter, then add stock. Boil rice, but do not let it get pulpy, add it to the above with tomatoes in a puree. Mix it all up well, add more stock, and grated Parmesan and Cheddar mixed, and serve hot.
