Frittata di Riso (Savoury Rice Pancake)


  • 1/4 pound of rice
  • milk
  • 1 ounce of butter
  • 2 tablespoonsful of grated Parmesan
  • pinch of cinnamon
  • yolks of 4 eggs beaten up


Boil rice in milk until it is quite soft and pulpy, drain off the milk and add to the rice butter, Parmesan, and cinnamon, and when it has got rather cold, the yolks. Mix all well together, and with this make a pancake with butter in a frying pan.
