Cakes alla Livornese

Ingredients

  • 2 ounces of almonds
  • 3 eggs
  • 1 spoonful of castor sugar
  • 2 ounces of sugar
  • orange juice
  • pinch of salt
  • 1 1/2 ounces of potato flour
  • 1 ounce of melted butter

Instructions

Pound almonds, and mix them with the yolks of 2 eggs and a spoonful of castor sugar flavoured with orange juice. Then mix 2 ounces of sugar with 1 egg, and to this add the almonds, salt, and gradually strew in potato flour. When it is all well mixed, add melted butter, shape the cakes and bake them in a slow oven.
