Welsh Rarebit


  • 1 pound of rich cheese
  • 1 gill of ale
  • 1 saltspoonful of dry mustard
  • 2 large slices of toast


Grate the cheese, mix it over the fire with the ale, working it smooth with a spoon; season it with the dry mustard; meantime make the toast, lay them on a hot dish, and as soon as the cheese is thoroughly melted, pour it over the toast and send it to the table at once.
