Tomato Sauce


  • 1/2 can of tomatoes or 6 large, fresh ones
  • 1 gill of broth of any kind
  • 1 sprig of thyme
  • 1 sprig of parsley
  • 3 whole cloves
  • 3 peppercorns
  • 1/2 ounce of onion sliced
  • 1 ounce of butter
  • 1/2 ounce of flour


Boil together, for one hour, the tomatoes, broth, thyme, parsley, cloves, peppercorns, and onion; rub them through a sieve with a wooden spoon, and set the sauce to keep hot; mix together over the fire the butter and flour, and when smooth, incorporate with the tomato sauce.
