Spring Dressing


  • yolks of 2 raw eggs
  • 1 teaspoonful of salt
  • 1 saltspoonful of dry mustard
  • 1 leek or 2 new onions
  • 3 tablespoonfuls of oil
  • 1 tablespoonful of vinegar
  • 2 heads of lettuce
  • boiled beets


Beat the yolks, add the salt, and dry mustard, chop the leek or onions, and mix them in, then add the oil and vinegar and mix thoroughly; tear up the lettuce, putting thin slices of boiled beets upon it, and pour the dressing over all.
