Tartare Dressing For Fish Croquettes


  • yolk of 1 raw egg
  • salt
  • red pepper
  • mustard
  • salad oil
  • juice of 2 lemons or 1/2 cup of vinegar
  • 1 tablespoon of capers
  • 6 small cucumber pickles chopped fine
  • onion


Take the yolk; beat; add a little salt, red pepper, mustard and mix well. Beat in salad oil until thick; let stand on ice until needed. Then add the lemon juice or vinegar, capers, cucumber pickles and very little onion. Serve cold with hot croquettes.
