Pepper Hash



  • 1 head of cabbage
  • 1 bunch celery
  • 6 green peppers
  • 6 peeled and sliced onions
  • 1 quart of vinegar
  • 2 cups white sugar
  • 1/2 cup of salt
  • 2 tablespoons of mustard seed
  • 1 tablespoon of celery seed


Chop the cabbage, celery, green peppers and onions fine together and let stand over night. Drain in the morning and mix the chopped vegetables with the vinegar, white sugar, salt, mustard seed and celery seed. Seal in jars, keeps well all winter.
