English Salad Dressing


  • yolks of 2 hard boiled eggs
  • 1 saltspoonful of salt
  • 1 scant teaspoonful of powdered sugar
  • a few grains cayenne
  • 1 teaspoonful of cold water
  • 1/2 cupful of cream
  • 1 tablespoonful of strong chili vinegar
  • 1 tablespoonful of cider vinegar


Mash the yolks to a paste. Add the salt, powdered sugar, cayenne, cold water and mix it well. Stir in by degrees the cream, then stirring very rapidly, add the chili vinegar and cider vinegar. Six tablespoonfuls of olive oil may be used instead of cream, adding gradually.
