English Orange Cheese Cakes or Tarts

Ingredients

  • 1/2 pound sugar (1 cup)
  • 1/4 pound butter (1/2 cup)
  • 3 eggs
  • juice of 2 oranges and grated rind of one
  • juice of 1 lemon

Instructions

The sugar mixed with the butter, add the eggs, (reserving white of one), orange juice and grated rind, lemon juice. Beat well. Simmer until like honey. Fill baked patty or tart shells of pie crust. Make a meringue of the stiffly beaten white of egg and one tablespoon of sugar. Frost the tarts, sprinkle with sugar and brown in a moderate oven. Serve cold.
