Cucumber Sauce


  • 4 cucumbers
  • 1 tablespoon of grated onion
  • 1/2 teaspoon of salt
  • 1 saltspoon of pepper
  • 2 tablespoons of vinegar (Tarragon if convenient)
  • 6 tablespoons of cream


Pare the cucumbers, throw them into cold water for half an hour then grate them and drain. Add the grated onion and salt, pepper and vinegar. Whip the cream stiff, and stir gradually into the cucumber mixture and serve at once with creamed fish, deviled salt fish or baked or broiled fish or with cold boiled or baked mutton.
