  • 1 large tablespoon of butter
  • 2 tablespoons of flour
  • 1 cup milk or cream
  • 1 teaspoon onion juice
  • 1 teaspoon salt
  • dash of pepper
  • dasg of nutmeg
  • 1 beaten egg
  • 1 cup of minced meat or chicken


Cook the butter with the flour, add the milk or cream, onion juice, salt, pepper, nutmeg and beaten egg. Mix with the meat or chicken, form into croquettes after the mixture has stood an hour. Fry brown in deep fat after rolling in egg and bread crumbs.
