Pumpkin Pies (About Four Pounds)
- 1 small pumpkin, about four pounds
- 3 eggs
- 3 tablespoonfuls of molasses
- 2 tablespoonfuls of ground cinnamon
- 1 tablespoonful of ginger
- 2 teaspoonfuls of salt
- 2 quarts of hot milk
Pare the pumpkin, and take out the seeds. Steam till soft, and strain through a colander.
Beat in the eggs, molasses, ground cinnamon, ginger, salt, and hot milk. If more sweetening is needed add a little sugar. Bake with an under crust only. This receipt will make five pies.
