Mustard Sauce

(Corned beef, broiled and roasted meats)

Ingredients

  • 1 tablespoonful of butter
  • 1 teaspoonful of flour
  • 1 cupful of stock
  • 1 tablespoonful of French mustard
  • 1 tablespoonful of vinegar
  • dash of cayenne
  • 1 teaspoonful of dry English mustard
  • 1/2 teaspoonful salt
  • 1 teaspoonful of sugar

Instructions

Make a roux of the butter and flour. Add to it the stock, mustards, vinegar, cayenne, salt, and sugar. Cook slowly for ten minutes.
