Lyonnaise Potatoes


  • 1 1/2 tablespoonfuls of butter
  • 1 scant tablespoonful of chopped onion
  • 2 cupfuls of cold boiled potatoes
  • salt
  • pepper
  • 1 tablespoonful of chopped parsley


Put the butter in a frying-pan. When melted add the onion; let it slightly color, then add the potatoes cut into dice. Stir until the potato has absorbed all the butter, and become slightly browned; then sprinkle with salt, pepper, and the parsley. Mix well, and serve very hot.
