Fried Chicken


  • a tender chicken
  • salt
  • pepper
  • flour
  • 1 tablespoonful of lard or butter
  • 1 cupful of milk or cream
  • 1 tablespoonful of chopped parsley


Cut a tender chicken in pieces; dip the pieces in water; sprinkle them with salt and pepper, and roll them in flour; saute them in the lard or butter, browning both sides; then remove and add to the pan a tablespoonful of flour; cook it for a minute without browning, stirring all the time, and add the milk or cream; stir until it is a little thickened; strain; mix into it the chopped parsley. Place the sauce on the serving-dish and arrange the pieces of chicken on it.
