Corn Pudding


  • 24 ears of green corn
  • 1 pint of milk
  • 1/2 pound of butter
  • 3 eggs, the whites and yolks beaten separately
  • salt
  • white pepper


Scrape with a knife the ears of green corn, cutting each row through the middle. Add the milk, butter, eggs, a little salt, and white pepper. Stir the yolks into the milk and corn, pour into a baking-dish, stir in the whites, and bake an hour and a half.
