Cold Slaw


  • 1 firm cabbage
  • yolks of 3 eggs
  • 1/2 cupful of vinegar
  • 1 tablespoonful of butter
  • 1/2 teaspoonful of mustard
  • 1/2 teaspoonful of pepper
  • 1 teaspoonful of sugar
  • 1 teaspoonful of salt


Shred a firm cabbage very fine. Mix it with a French dressing, using an extra quantity of salt, or put into a bowl the yolks, vinegar (if it is very strong dilute it with water), butter, mustard, pepper, sugar, and salt. Beat them together, place the bowl in a pan of boiling water, and stir until it becomes a little thickened. Pour this while hot over the cabbage, and set it away to cool.
