Chops a la Maintenon


  • 1 tablespoonful of butter
  • 1 tablespoonful of flour
  • 4 tablespoonfuls of chopped mushrooms
  • 1 teaspoonful of parsley
  • 1/2 teaspoonful of salt
  • dash of pepper
  • 3 tablespoonfuls of stock
  • 6 French chops


Put the butter in a frying-pan; when hot add the flour; let the flour cook a few minutes; then add the mushrooms, parsley, salt, and pepper; moisten with the stock; mix well together and set aside to cool. Have the French chops cut one inch thick. With a sharp knife split the chops in two without separating them at the bone; spread the mushroom mixture between the opened chops; press the edges well together, and broil for eight minutes; serve with an olive sauce.
