Oyster Toast

Ingredients

  • 15 plump oysters
  • salt
  • pepper
  • nutmeg
  • yolks of 2 eggs
  • 1 gill of cream
  • buttered toast

Instructions

Select the oysters; chop them fine, and add salt, pepper, and a suspicion of nutmeg. Beat up the yolks with the cream; whisk this into the simmering oysters. When set, pour the whole over slices of buttered toast.
