Samoset Salad

Ingredients

• lettuce
• pickled beets
• cottage cheese
• 3 tablespoons beet vinegar
• 3 tablespoons oil
• 1/4 teaspoon salt
• 1/8 teaspoon pepper

Instructions

Arrange lettuce in salad bowl, cover with slices of pickled beets, and sprinkle thickly with cottage cheese. Cover with dressing made of the beet vinegar and oil, salt, and pepper.
