Bread Sauce, for Turkies, Game, etc.


  • a piece of crumb of bread
  • 1/2 pint of milk or cream
  • 1 peeled middling-sized onion
  • 2 ounces of fresh butter
  • white pepper
  • salt


Soak the crumb of bread with the milk or cream, add the onion, and put them over a fire; when the milk is absorbed bruise the bread, mix with it the butter, a little white pepper, and salt; and when it is to be served up take out the onion.
