Anchovie Sauce for Fish


  • 1/2 pound of fresh butter
  • 3 spoonfuls of anchovie liquor
  • 1 spoonful of walnut ketchup
  • 1 spoonful of mushroom ketchup
  • juice of 1/2 lemon
  • a little cayenne pepper
  • 1 tea spoonful of india soy if approved
  • flour


Put the butter into a stewpan, add to it the anchovie liquor, walnut and mushroom ketchups, lemon juice, cayenne pepper, india soy, a sufficient quantity of flour and water to make it of a proper thickness. Make the mixture boil, and skim it clean.
