  • 1 pound sugar
  • 2 tea spoons pearl ash
  • milk
  • 2 1/2 pounds flour
  • 4 ounces butter
  • 2 large spoons of finely powdered coriander seed


Boil the sugar slowly in half pint water, scum well and cool, add the pearl ash dissolved in milk, then the flour, rub in the butter, and coriander seed, wet with above; make roles half an inch thick and cut to the shape you please; bake fifteen or twenty minutes in a slack oven, good three weeks.
