Another Christmas Cookey


  • 3 pounds flour
  • 1 tea cup of fine powdered coriander seed
  • 1 pound butter
  • 1 1/2 pounds sugar
  • 3 tea spoonfuls of pearl ash
  • 1 tea cup of milk


To the flour, sprinkle the coriander seed, rub in the butter, and sugar, dissolve the pearl ash in the milk, kneed all together well, roll three quarters of an inch thick, and cut or stamp into shape and size you please, bake slowly fifteen or twenty minutes; tho' hard and dry at first, if put into an earthern pot, and dry cellar, or damp room, they will be finer, softer and better when six months old.
