Russian Beet Soup


  • 5 medium-sized beets
  • chicken broth
  • juice of 1 lemon
  • cinnamon
  • nutmeg
  • 1 glass of red wine
  • 1 teaspoonful of brown sugar
  • fried croutons


Boil beets until tender.

Then chop and add to a highly seasoned chicken broth.

Add the lemon juice, some cinnamon and nutmeg; let boil fifteen minutes.

Then add red wine, mixed with brown sugar.

Let boil a few minutes longer and serve with fried croutons.
