English Boiled Pudding


  • 1/2 pound of butter
  • 1/2 pound of powdered sugar
  • 6 eggs
  • 1/2 cup of seeded raisins
  • chopped citron
  • pinch of nutmeg and cinnamon
  • 1/2 pound of sifted flour
  • 1/2 teaspoonful of baking-powder


Mix butter with powdered sugar to a cream.

Add the yolks of 6 eggs beaten, raisins and some chopped citron, nutmeg and cinnamon.

Mix in sifted flour and baking-powder.

Add the whites, beaten to a stiff froth.

Put in a buttered pudding-mold, and let boil until done.

Serve with brandy sauce.
